Plum Blush Swirl sCream!   My plum tree is finally ripe again and I went to make this recipe today when I realized one of the ingredients had a miscalculation of cream.  2 cups of cream should have been 4 cups.  Then I realized wow that is a lot of ice cream. especially if you are making it in a small ice cream maker. Here is the fix - I halved the recipe.  As I was making the recipe today I tinkered a little with it to simplify one of the steps (removed the blender portion of it and replaced that with stirring the plums in a sieve. I also adjusted the quantities you should should of the juice for the rest of the steps.   I hope you will enjoy this recipe as much as I have making it… Keep checking in to this page to see if there are any updates. My plum tree is finally ripe again and I went to make this recipe today when I realized one of the ingredients had a miscalculation of cream.

2 cups of cream should have been 4 cups.

Then I realized wow that is a lot of ice cream. especially if you are making it in a small ice cream maker. Here is the fix - I halved the recipe.

Chocolate Ginger-Fudge Swirl sCream!   Where’s the cream? Just discovered my mistake. 1 1/2 cup of Cream was missing from the recipe. Hopefully you have not tried this one yet… but if you have I am sure it was a deliciously low fat high sugar mess that didn’t quite churn up right… more like a frozen soup. Sorry for that. The cream may either be added at the end as I have done in this drawing or can be added when you are warming the milk and adding the ginger syrup… if you add it earlier the ginger will be much stronger it’s up to you. Just know if you ever have a recipe that doesn’t churn within the 20 minutes it should one of the reasons is because there is too much sugar in the recipe or the base is not cold enough before churning…. Add a little more milk or cream. Cream will make it heavier in fat and milk will make it more icy. Thats it for now… and check back periodically if I have caught more mistakes. :)

I didn’t discover it until I was in NY and had a moment to breath and of course I stopped breathing for a moment when I caught it.. oh no!!!… Don’t fret… Ice cream making has a little bit of forgiveness. the worst thing that can happen is that it won’t be as creamy or solid as a rock.  The correction should ready 1 1/2 Cups.

Vanilla Mandarin Orange Fudge Swirl  I noticed this when I was in NY…  originally the mistake was just under the handle it ready “dissolve sugar”… when it should have read “warm milk” it had me wondering at first did I forget to add the sugar… luckily the ingredients are correct.

Lime Ginger Sorbet   From time to time I notice small subtle differences that I like to adjust… this recipe is one of them. Ive noticed the previous version of this was a little too heavy in the sugar. I drecresed the sugar… from 2 cups to 1 1/2 Cups and increased the soda water from 1 Cup to 2 Cups.   while you can certainly make the previous version… you will find that it takes longer to freeze and when it does the sugar settles to the bottom of the container. The ideal sorbet is one that is scoopable when frozen… yet not so soft that it melts the moment you take it out of the freezer.
